Description

Balsamic Strawberries crostini combines sweet and tangy reduced balsamic vinegar with fresh strawberries and a hint of lemon zest, served atop toasted baguette slices with creamy ricotta cheese for an elegant appetizer or snack.

Ingredients

Scale

Strawberries Mixture

  • ½ cup strawberries, chopped
  • ¼ cup balsamic vinegar
  • 1 teaspoon lemon zest
  • 2 teaspoons brown sugar

For Serving

  • 5 tablespoons ricotta cheese (optional, for crostini)
  • Baguette slices, enough for 12 crostini

Instructions

  1. Toast the Baguette: Preheat oven to 350°F (175°C). Arrange baguette slices on a baking sheet and toast in the oven for 5 minutes or until golden and crisp.
  2. Prepare the Strawberries: Chop the strawberries into small pieces. If the strawberries are very ripe and juicy, place them on a paper towel to absorb extra moisture to prevent sogginess.
  3. Make the Balsamic Reduction: In a small saucepan, combine the balsamic vinegar and brown sugar. Heat over medium heat and simmer for 6 to 8 minutes, stirring occasionally until the mixture reduces and thickens into a syrupy consistency.
  4. Combine the Ingredients: In a bowl, add the lemon zest to the chopped strawberries. Pour the warm balsamic reduction over the strawberries and gently stir to combine all the flavors.
  5. Assemble the Crostini: Spread a tablespoon of ricotta cheese on each toasted baguette slice (if using). Spoon the balsamic strawberries mixture on top and serve immediately.

Notes

  • The ricotta cheese is optional but adds a creamy texture and balances the acidity of the balsamic reduction.
  • Ensure the balsamic reduction is thick enough to coat the strawberries without making them soggy.
  • Use fresh, ripe strawberries for the best flavor.
  • These crostini are best served immediately to maintain the crunch of the toasted bread.
