Description

  • 1-2 large baking potatoes

Cheese & Seasoning

  • 1 (200g) block of feta
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper

Oils & Extras

  • 2 tbsp olive oil
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey


Instructions

  1. Preheat Oven: Preheat the oven to 390°F (200°C) to prepare for baking the potatoes and feta together.
  2. Prepare Potatoes: Wash and cube the baking potatoes into bite-sized pieces, then place them in a baking dish.
  3. Season Potatoes: Sprinkle the potatoes evenly with dried thyme, oregano, salt, and black pepper. Drizzle 1 tablespoon of olive oil over them, then toss gently to coat all the pieces in the seasoning and oil.
  4. Add Feta and Aromatics: Place the block of feta in the center of the baking dish, surrounded by the seasoned potatoes. Add the head of garlic with the top cut off and the quartered lemon wedges around the potatoes. Drizzle the remaining olive oil over everything for extra richness.
  5. Bake: Place the dish in the preheated oven and bake for 45-55 minutes, or until the potatoes are golden brown and crispy on the edges, and the feta is soft and slightly golden on top.
  6. Mash Garlic: Remove the garlic head from the baking dish once cooked. Squeeze out the softened garlic cloves and mash them gently into the potatoes to infuse flavor.
  7. Combine & Serve: Mash the softened baked feta cheese into the potatoes and garlic, then add a squeeze of fresh lemon juice from the roasted wedges. Garnish with fresh basil if desired and serve warm.
