Description

This vibrant Antipasto Salad combines fresh heirloom tomatoes, creamy mozzarella, and savory salami with tangy pepperoncini and a bright balsamic glaze. A perfect no-cook Italian-inspired dish that’s easy to assemble and ideal for gatherings or a light meal.

Ingredients

Scale

Salad Ingredients

  • 4 heirloom tomatoes, sliced
  • 16 ounces fresh mozzarella, sliced
  • 6 ounces salami or other cured meat
  • 1/2 cup fresh basil leaves
  • 1/2 cup cherry tomatoes
  • 1/3 cup pepperoncini

Dressing

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Arrange Ingredients: Arrange the sliced heirloom tomatoes, fresh mozzarella slices, salami, and basil leaves in a repeating pattern side by side in two parallel lines inside a 9×13 inch baking dish for an even and aesthetic presentation.
  2. Add Cherry Tomatoes and Pepperoncini: Place the cherry tomatoes and pepperoncini alongside the arranged slices on the side of the dish. Fold any remaining salami slices and arrange them decoratively around the edges of the dish to fill any gaps.
  3. Season and Dress: Drizzle the entire dish evenly with extra virgin olive oil and balsamic glaze, then sprinkle the sea salt and ground black pepper on top to enhance the flavors and add balance to the fresh ingredients.

Notes

  • This salad is best served immediately to enjoy the freshness of the ingredients.
  • You can substitute salami with other cured meats like prosciutto or coppa.
  • For a vegetarian version, omit the salami and add more vegetables like roasted peppers or artichoke hearts.
  • Balsamic glaze adds sweetness, but for a lighter option, you may replace it with balsamic vinegar.
  • Use fresh, ripe heirloom tomatoes for the richest flavor.
