Instructions

  1. Marinate the Chicken: In a large bowl, whisk together pickle juice, milk, and eggs. Add the bite-sized chicken pieces and toss to coat them completely. Let the chicken marinate for at least 30 minutes or up to overnight to allow flavors to infuse and tenderize the meat.
  2. Prepare the Coating: In a separate large bowl, combine the flour, plain breadcrumbs, powdered sugar (if using), salt, black pepper, garlic powder, and paprika. Mix well to distribute the seasonings evenly.
  3. Coat the Chicken Nuggets: Using tongs, remove chicken pieces from the marinade letting the excess liquid drip off. Add a few pieces at a time into the breadcrumb mixture, tossing gently until each piece is evenly coated. Repeat until all chicken pieces are coated. Some coating mix may remain.
