These Air Fryer Blueberry Hand Pies are a delightful treat that combines the sweetness of blueberries with a flaky crust, all cooked to perfection in the air fryer. Easy to make and perfect for a summer dessert!

Filling:
- 1 cup fresh or frozen blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
Crust:
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg (beaten, for egg wash)
- 1 tablespoon milk
- Coarse sugar for topping (optional)
- Non-stick spray or oil for air fryer basket
Instructions
- Filling: In a small saucepan over medium heat, combine blueberries, sugar, cornstarch, lemon juice, and vanilla. Cook until thickened. Cool.
- Assembly: Roll out pie crusts, cut into circles, spoon filling onto half, top with another piece, seal edges with a fork.
- Egg Wash: Brush tops with egg and milk mixture. Sprinkle with sugar, if desired.
- Cooking: Spray air fryer basket, place pies inside, air fry at 350°F for 10-12 minutes until golden brown. Cool before serving.
Notes
- To prevent filling leakage, don’t overfill pies and seal edges tightly.
- Hand pies can be enjoyed warm or at room temperature, and can be reheated in the air fryer.
