Description

These Air Fryer Blueberry Hand Pies are a delightful treat that combines the sweetness of blueberries with a flaky crust, all cooked to perfection in the air fryer. Easy to make and perfect for a summer dessert!


Ingredients

Filling:

  • 1 cup fresh or frozen blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

Crust:

  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg (beaten, for egg wash)
  • 1 tablespoon milk
  • Coarse sugar for topping (optional)
  • Non-stick spray or oil for air fryer basket


Instructions

  1. Filling: In a small saucepan over medium heat, combine blueberries, sugar, cornstarch, lemon juice, and vanilla. Cook until thickened. Cool.
  2. Assembly: Roll out pie crusts, cut into circles, spoon filling onto half, top with another piece, seal edges with a fork.
  3. Egg Wash: Brush tops with egg and milk mixture. Sprinkle with sugar, if desired.
  4. Cooking: Spray air fryer basket, place pies inside, air fry at 350°F for 10-12 minutes until golden brown. Cool before serving.

Notes

  • To prevent filling leakage, don’t overfill pies and seal edges tightly.
  • Hand pies can be enjoyed warm or at room temperature, and can be reheated in the air fryer.
